I always play with recipes for veggie burgers. I think this one might stick. I used quinoa, white beans, roasted red peppers and mushrooms to make them. Check out the recipe below:
1 Can white beans
1 Red pepper
1 Cup quinoa
2 Cloves of Garlic
Salt, pepper or steak seasoning
Flour or oats
Get the quinoa going. I like to cook mine in veggie broth for more flavor. While that cooks, rinse the white beans and place them in a large bowl. You can add seasoning at this stage if you want. I added a little salt, pepper and cayenne.
Heat up some olive oil and add the red pepper. I added steak seasoning and roasted the peppers until they blackened. After they are roasted, add them to the bowl with the white beans.
Next roast the mushrooms with the garlic. You can do this at the same time as the peppers, I just didn’t want them as blackened.
When the quinoa is cooked, drain the liquid remaining and add it to the bowl. MIx everything together and begin to add flour until the consistency is thick enough. I probably added close to a cup. You can also substitute flour with oats for texture.
I used a hand blender, but you can use anything.
Lastly, I just used a little bit of olive oil and heated it until both sides were browned.
I like this recipe because the burger actually stayed together when I cooked it. Usually the burger falls apart. At the end I added some provolone and ate it with sandwich thins because I’m not a huge fan of hamburger rolls.
